What we're cooking this week

Five delicious dishes to get you through the week.

SHARE

It's the start of a new week which means it's time to figure out what to cook.

Our food cravings have inspired this list, based on recipes we've been posting on the site lately. The dishes below are ones we know we'll cook again and again, so try them out with us and let us know what you think.

Easy Guinness bread

Throughout lockdown, baking bread has become a worldwide obsession. While lots of people have become fascinated with tending to their sourdough starters, we still have a soft spot in our hearts for classic Guinness bread. This recipe is easy to master and freezes really well - double the batch and freeze one for later. Try the recipe here

Slow-cooked spaghetti bolognese

It seems like we should have lots of extra time now that most of us are working from home, but if you're anything like we are, then you must feel like the days are flying by and you somehow have even less time than usual. Trust us, it's normal to feel this way. If it's getting tedious for you to stand at the cooker every night, take a night off and try this spaghetti recipe. You don't have to do too much and can leave it in the oven while you work, plus it's a super comforting dish. Clock off, treat yourself to a bowl of this spaghetti alongside a nice glass of red wine and relax. Get the recipe here

Drop scone pancakes with dry-cured bacon and apple syrup

Another classic recipe, this time with an early morning twist. This recipe for drop scone pancakes from My Wild Atlantic Kitchen: Recipes and Recollections by Maura O'Connell Foley is homely and comforting, the sort of thing your granny might have made for you years ago. Classic Irish recipes are full of flavour and this is the time to master one of the best. Try the recipe here

Pasta with pumpkin, ricotta and sage

This recipe is one we come back to again and again. It's so easy to whip up and packs a serious punch of flavour. The sage butter is unbelievably tasty and would work as a great sauce with chicken too. Try the recipe here.

BBQ chicken and avocado tacos

Allegedly, the weather is going to pick up this week and if it does, we'll be firing up the barbecue and trying out this recipe. Grilling chicken adds so much flavour to it, but if you want a veggie option, try using aubergine or halloumi in its place. Try the recipe here.
