1. Scallops With Lisduff Black Pudding And Balsamic Strawberry

The Fatted Calf, Church Street

This dish looks like it highlights the absolute best of Irish produce. Featuring scallops, black pudding and balsamic strawberries, this starter from The Fatted Calf is perfect for summer.

2. Pan-Seared Fillet of Salmon With Baby Potatoes, Kale, Chorizo And Dill Oil

Hatters Lane Bistro, Strand Street

Now in its 20th year, Hatters Lane Bistro offers a wide range of delicious casual dining options. We really love the look of this new salmon dish, which uses lots of summery flavours to create a fresh, tasty dish.

3. Lamb Shank Curry

Kin Khao Thai, Abbey Lane

Kin Khao Thai is one of Athlone's best Thai restaurants, offering seriously delicious and authentic flavours. This lamb shank curry looks like comfort food at its finest so we are really craving it right now. If you can't make it to Athlone to try out this dish, it's also available at Kin Khao Thai in Maynooth.

4. Cod, Smoked Mackerel, Scapes, Pickled Mussels

Thyme Restaurant, Custume Place

One of our favourite restaurants in Athlone, Thyme serves up modern Irish cuisine made with amazing local ingredients from all over the midlands. This seasonal cod dish highlights the best of what's in season right now and we're dying to try it out.

5. Tom Yum Soup

Jalan Jalan, Church Street

Tom Yum soup is one of our absolute favourite dishes, jam-packed with nourishing Thai flavours, squid and prawns. Jalan Jalan Athlone is the sister restaurant of the restaurant's Galway branch, which is massively popular, so you know you're in for a good feed when you visit.
