What We're Cooking This Week

Five dishes we want to eat this week.

It's the start of a new week which means it's time to figure out what to cook.

Our food cravings have inspired this list, based on recipes we've been posting on the site lately. The five dishes below are ones we know we'll cook again and again, so try them out with us and let us know what you think!

1. Soda-Breaded Bacon Chops With Irish Honey & Whiskey Dip & Colcannon

Clodagh McKenna's recipes are always delicious and this recipe sounds like it will be no different. This dish is an updated version of the classic Irish dish, bacon and cabbage, and we are absolutely obsessed with the honey and whiskey dip, which we think would go with lots of other meats too. Get the recipe here.

2. Lemon And Polenta Cake With Blueberries

This cake is full of summery flavours and is so easy to whip up. The method of boiling and blitzing the lemons makes the cake really moist and moreish. If lemon and blueberries aren't your favourite flavours, try it with orange and raspberries instead. Get the recipe here.

3. Chilled Avocado And Watercress Soup

Susan Jane White's chilled soup is perfect for this time of year because it's so refreshing, as well as being absolutely delicious. We love how much goodness is packed into this soup too, so one bowl will have you feeling healthy and virtuous for the whole week. Click here for the recipe.

4. Panzanella Salad With Mozzarella and Pesto

Ever since we posted our Pantry Staples Guide to Balsamic Vinegar, we've been craving this gorgeous Niall HIll recipe. Utilising balsamic vinegar in the dressing, this salad combines fresh summery vegetables with gorgeous Irish cheese. We can't wait to eat this for lunch this week! Get the recipe here

5. Pan-Roasted Hake

Another guide-inspired dish, this Bryan McCarthy hake recipe was featured in our Back To Basics With Hake article. This dish is perfect for the weekend as it requires a little more prep than you might have time for during the week, but the end result is worth it. Get the recipe here.
