Tom Yum Soup

Ingredients

  • 2 packs of Sadie’s Kitchen Bone Broth or 700mls of chicken stock 
  • 1 lemongrass stalk, crushed 
  • 2 inches of ginger, thinly sliced 
  • 1 red chilli, halved 
  • 3 garlic cloves, crushed 
  • 3 lime leaves, torn 
  • 2 plum tomatoes, roughly chopped 
  • 125g mushrooms, sliced 
  • 200g raw prawns 
  • 1 tablespoon brown sugar 
  • 1 lime, juiced 
  • 1 tablespoon fish sauce
  • Chopped chilli, to serve
  • Limes, quartered, to serve

Directions

  1. Pour the bone broth into a pot over a medium heat and bring to the boil.
  2. Add in the lemongrass, ginger, chilli, garlic and torn lime leaves. Simmer gently for 20 minutes.
  3. Add the tomatoes and mushrooms, and continue to simmer for 5 minutes.
  4. Next, add the prawns and cook until they turn pink, then add in the sugar, lime juice and fish sauce to season.
  5. To serve, discard the lemongrass and lime leaves, then divide the soup between bowls. Garnish with some freshly chopped chilli and a lime quarter.
