Our next course starts this monday - link in bio to learn more @thehappypear Chickpea, mushroom & fine beans curry 10 mins Feeds 2-4 people 4 scallions/ spring onions Garlic - 2 cloves (peeled) Chilli - ½ deseeded chili Ginger - ½ thumb size Chickpea - 2 x 400g tins 100g fine beans/Sugarsnaps 200g mushrooms Coconut milk - 1 x 400ml tin 1 tin chopped tomatoes (400ml) 1 tbsp Curry powder 1 tsp paprika, 1 tsp ground Cumin 1 tsp ground Coriander 1 tbsp Tamari juice of 1 lemon Salt, chilli and ground black pepper to taste 100g of baby spinach Fresh coriander to garnish Method; * Peel and finely chop the Spring onions, garlic ginger and chilli * Chop the fine beans and mushrooms into bite sized pieces * Drain and rinse the chickpeas * Heat a non stick pan with 1 tbsp of oil over a high heat, add the chopped spring onions, garlic, ginger and chilli reduce the heat to medium and cook for 4-5 minutes, stirring regularly. * Add your bite sized chopped mushrooms to the pan with the fine beans, with the curry powder, paprika, ground cumin and ground coriander and a generous pinch of salt, stir and cook for 10 minutes stirring occasionally with a lid on. Remember to stir occasionally to stop veg from sticking and burning to the bottom, cook until your veg is soft and cooked through * Add your drained and rinsed chickpeas * Add tinned tomatoes and coconut milk along with the tamari, lemon juice, bring to the boil, then reduce to a simmer, cook for 1-2 minutes or longer if you would like a thicker sauce. Add the washed baby spinach and stir in to allow it to wilt. * Taste the dish for seasoning before serving and add, salt, pepper, acid, if required. * Garnish, with some chopped fresh coriander - serve and enjoy! #vegan #plantbased #recipe #health #healthydinner #healthyrecipe

Little Christmas, also known as women's Christmas or Nollaig na mBan in Irish, marks the end of the twelve days of Christmas. Decorations come down and the festivities are officially over as everyone moves on to a new year.

The Twilight Dinner is a four-course meal made with some of head chef Angel Pirev's favourite ingredients costing just €49 per person. An alcohol-free January at The Shelbourne with The Virgin Mary Bar
Sean McGoldrick from The Shelbourne has collaborated with Anna Walsh, bar manager at Ireland's first non-alcoholic bar The Virgin Mary Bar, to create an alcohol-free menu for January. The six drinks featured on the menu utilise popular ingredients like Seedlip Grove and Garden, Darjeeling tea and chamomile bitters to create a well-rounded offering to ensure that non-drinkers don't feel out of place this January.
