• 2 apples, peeled, cored and cubed
  • 40g unsalted butter, cubed
  • 80g brown sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 50ml cream or full-fat milk

  • 2 apples, peeled, cored and cubed

Method

  1. Combine all the ingredients except for the cream or milk in a saucepan over a low heat. Stir until the butter is melted. Add half the butter or cream and bring to a simmer.
  2. Once the mixture begins to thicken, add the rest of the milk or cream. Continue to cook on a low heat until the apple is soft and the sauce turns to caramel, stirring as you go.
  3.  Serve over pancakes with some chopped nuts.
