An easy and nutritious breakfast with a difference. Get the best quality smoked salmon you can afford – there are plenty of fantastic producers in Ireland.
- 2 ripe avocados
- 2 tablespoons crème fraîche
- Salt and pepper
- 1 lime, juice only
- 8 slices wild Irish smoked salmon
- Dill or chives, chopped
- Destone the avocados and remove the flesh. Mash with a fork. Add the crème fraîche, salt and pepper and half the lime juice.
- Once your pancakes are ready, lay the smoked salmon slices on each one, top with the avocado mix and sprinkle over some chopped fill or chives. Serve immediately.
