An easy and nutritious breakfast with a difference. Get the best quality smoked salmon you can afford – there are plenty of fantastic producers in Ireland.

  •  2 ripe avocados
  • 2 tablespoons crème fraîche
  • Salt and pepper
  • 1 lime, juice only
  • 8 slices wild Irish smoked salmon
  • Dill or chives, chopped


  1.  Destone the avocados and remove the flesh. Mash with a fork. Add the crème fraîche, salt and pepper and half the lime juice.
  2.  Once your pancakes are ready, lay the smoked salmon slices on each one, top with the avocado mix and sprinkle over some chopped fill or chives. Serve immediately.
