Sheridans Cheesemongers was set up by brothers Kevin and Seamus Sheridan in 1995 with a farmhouse cheese stall at the Galway Market, before the pair opened a store in Galway. Fiona Corbett joined the team in 1997 and shortly after stores around the country were opened, stocked high with cheeses from Ireland and further afield. Sheridans Cheesemongers have been working with Dunnes Stores since 2015 and the Cornelscourt outlet opened in 2016 as part of the store's complete revamp.
