Throwback Thursday: Poached Pears And Chocolate Sauce

It's Throwback Thursday again and today we have a recipe from our October 2015 issue.



  • 8 pears
  • 1 lemon
  • 1 orange
  • 600ml white wine
  • 1 vanilla pod
  • 1 x 5cm stick of cinnamon
  • 200g caster sugar

For the chocolate sauce

  • 300g plain chocolate
  • 300ml double cream
  • 150ml full-fat milk
  • 25g butter


  1. Slice the bottom off each of the pears, remove the core (with a sharp knife or
    decorer) and peel. Place in a saucepan with the white wine and 600ml of water.
  2. Trim the zest of the lemon and orange into strips add to the pan along with the
    juice of both. Add the vanilla, cinnamon and caster sugar.
  3. Bring to the boil, lower the heat and poach for 20 minutes or until the pears are

TIP: Rinse and dry the vanilla pod and store with your sugar to impart something of a
vanilla flavour.
