- 100g sugar
- 125ml white wine
- 1 orange, zest only
- 300ml double cream
- 80g plain chocolate, grated
- Combine the sugar, white wine and zest of the orange and dissolve the sugar over a gentle heat.
- Stir in the cream and the grated chocolate and, stirring continuously, melt the chocolate over a gentle heat. As the mixture thickens, about five minutes, and the chocolate melts, withdraw from the heat.
- Pour into small pots, set aside to cool and then refrigerate until thick. You don’t need too much of this mixture, it is rather rich.
