Leftover pancake quesadillas

Leftovers from Pancake Tuesday? Try these tasty Quesadillas!

  • 100g cheese
  • 2 tbsp tomato salsa
  • 3 tbsp sour cream
  • 2 spring onions, trimmed and chopped
  • Roast chicken, shredded
  • 4 pancakes


  1. Heat a frying pan over a medium high heat. Place one pancake into a frying pan and spread with around 1 tbsp of the salsa. Add half the grated cheese and leave to cook for 5 minutes, or until the cheese has started to melt.
  2. Add the chopped spring onions, shredded roast chicken and 1 tbsp of the sour cream. Top with another pancake, press down to stick the two sides together & flip. Cook for another few minutes then transfer to a plate and keep warm in the oven.
  3. Repeat the process with the remaining ingredients then cut into triangles and serve with fresh salad leaves &chilli mayonnaise on the side.
