Japanese spare ribs

Try this fresh new take on pork spareribs, featuring a fragrant orange marinade.

Serving: 4
Time: 30 minutes
Difficulty: Medium

  • 1kg pork spare rib
  • 50g carrot
  • 60g onion
  • 5g ginger
  • 75g soy sauce
  • 45g orange marmalade
  • 8g pepper
  • 20g garlic
  • 50g white wine
  • 80g toasted sesame seeds
  • 2 oranges

  1. Peel and cut the carrots, onion and garlic into small pieces.
  2. For the marinade, add the vegetables, soy sauce, pepper, orange marmalade, white wine and chopped ginger to a blender and blend until smooth.
  3. Place the spare ribs in a deep bowl, together with the marinade. Cover with plastic wrap and place in the fridge overnight to marinate.
  4. Pre-heat oven to 230ºC
  5. Line the base of a wire tray to catch drippings. Remove ribs from the marinade and place in the centre of the tray. Place half-cut oranges, in the corners of the tray.
  6. Add the tray to the top shelf of the oven for 15 minutes. Remove from the oven, spread marinade on the ribs. Sprinkle with sesame seeds and cook for a further 12 minutes.
  7. To serve, pile the ribs and the oranges on plates.
