Broccoli & potato soup

Made with simple ingredients, pureed until thick, and then topped with croutons and cheddar cheese to form a soup that is oh so belly-warming good!

Serving: 4
Time: 30 minutes to 1 hour
Difficulty: Easy


  • 2 shallots, chopped
  • 1 celery stalk, finely sliced
  • 400g mash potato
  • 300g broccoli
  • 1 litre vegetable stock
  • Salt & pepper to season
  • Croutons and grated cheddar to garnish 


  1. Fry the shallots and celery on a medium heat until softened.
  2. Stir in the maashed potato. Add the broccoli. Stir together.
  3. Pour in vegetable stock.
  4. Bring to a soft boil.
  5. Season with salt and pepper.
  6. Blend with a hand or tabletop blender.
  7. Garnish with croutons and grated cheddar
