Almond and apple bircher bowl

An easy breakfast that can be made the night before.

Serving: 4

  • 500g organic porridge oats
  • 20g dried cranberries
  • 10g sugar
  • 1 green apple
  • 500ml almond milk
  • 1kg full fat yogurt
  • 100g honey
  • 2 passion fruit
  • 1 green apple

1 Mix the oats, dried cranberries and sugar together in a bowl. Peel and grate the green apple. Add to the dry ingredients and mix. Place the mix in an overnight jar and pour in the almond milk. Leave to soak overnight.

2 Mix the honey and yoghurt together. Strain overnight through a muslin cloth. The next day, remove from the cloth and place in an airtight container and keep in the fridge. This will make more than you need for four people.

3 Divide the bircher between four bowls, place 1 tablespoon of labneh on top of the bircher. Place half a passion fruit on one side of the labneh and cut the green apple into matchsticks and sprinkle on top to serve.

Tip: This changes with the season. We used to soak the oats in apple juice but now we do it in almond milk. The garnishes can be changed to reflect the fruits of the season.
