Beetroot burgers

Gone are the days of bland, boring veggie burgers! Serve with fluffy buns and your favourite burger toppings.

Ingredients

  • 500g beetroot
  • 100g bread crumbs
  • 100g porridge oats
  • 3 eggs, beaten
  • 1 small red onion, very finely chopped
  • A large handful of finely chopped dill, thyme and parsley

Directions

  1. Peel and grate the beetroot and put it in a large bowl.  Add the bread crumbs, porridge oats, beaten eggs, onions and herbs, and season well. Mix it all together well with your hands. Season well. 
  2. Shape it into 6 or 7 burger-sized patties and then put them on a plate in the fridge for an hour or so.  This will help ensure that the burgers don’t fall apart in cooking.
  3. Preheat the oven to 180C/350F.
  4. Heat some oil in a pan and fry the burgers briefly on each side to seal them.  Then put them on a baking tray and bake them in the oven for 20 minutes and serve immediately.
