Ottolenghi SIMPLE features a new system to organise the dishes in which each letter of the word 'simple' refers to just how do-able the dishes are. The system is a clever way to encourage people to cook a variety of meals without feeling as though they don't have the skills or the time. The system goes as follows:

The cookbook is an ideal way to introduce hesitant cooks to Ottolenghi's unforgettable flavours. The book also champions Yotam's top ten ingredients, which include sumac, tahini and preserved lemon, showing readers their versatility in the hopes that they become everyday ingredients.

The three dishes that we think are most mouth-watering are Braised Eggs with Leek and Za'atar, Iranian Herb Fritters and Plum, Blackberry and Bay Friand Bake, so we've included the recipes for you to try.

Braised Eggs with Leek and Za'atar

A perfect brunch dish that will translate to any meal once you've mastered it. We particularly love the use of preserved lemons here, as they really add something special to the dish. Try it out to wow all your friends at Sunday brunch.

Iranian Herb Fritters

These herb fritters are fresh and easy-to-make, which makes them perfect for a quick weeknight meal. We particularly like the sound of them in a pitta with some green herb tahini dipping sauce to go with them.

Plum, Blackberry and Bay Friand Bake

This bake is sure to become a firm family favourite, thanks to its light texture and savoury flavours. Swap out the plums for whatever fruit is in season so that you can eat this cake all year round.
