We love peanut butter and we love popcorn, so this recipe from Louise Lennox sounds like the perfect match!
"I rediscovered peanut butter and became quite addicted to it in the past year. I’ve always liked peanuts mixed in with popcorn so peanut butter is even better"- Louise Lennox
Makes 1 large bowl
Ingredients:
- 50g pecans
- 50g almonds
- 2 tablespoons honey
- 75g peanut butter
- 50g butter
- Pinch sea salt
- 50g cooked popcorn
Method:
- Roughly chop up the pecans and almonds. Place in a saucepan with the honey. Cook for a few minutes on a medium heat until the nuts start to toast.
- Add in the peanut butter, butter and sea salt, stir until it begins to melt and becomes runny. Mix in the popcorn until evenly coated. Pour into a lined tray. Leave to cool a little. This is particularly delicious eaten warm
TIP: To make clusters, cook 2 tablespoons butter with the honey. Allow to bubble before adding the peanut butter. Once all the popcorn is coated in the mixture, use a spoon to form small clusters. Leave to set
