Shortlist Announced For S.Pellegrino’s Prestigious Young Chef 2020 Competition

Two young Irish chefs make it through to this year's final.


Among 135 up-and-coming culinary stars, two young chefs from Ireland have been shortlisted for the distinguished S.Pellegrino Young Chef 2020 Grand Finale.

They were impressively chosen after 2,400 applicants from all over the globe entered the prestigious competition with the hope of becoming the world’s best young chef.

The Irish Contenders      

Two Dublin-based Chefs: Arlen Oretega from Glovers Alley restaurant (created by Andy McFadden, FOOD AND WINE's 2018 Chef of the Year) and Nicolas Fagundes from Chapter One (a Michelin star restaurant experience with an emphasis on organic and locally sourced food), were amongst those selected for the shortlist by a judging panel of culinary experts from across the globe, which included Jess Murphy from Galway restaurant, Kai.

Each had to create an out-of-this-world signature dish, which was then evaluated by culinary experts at the World’s Leading International Educational and Training Centre for Italian Cuisine, ALMA. Their chosen dishes had to showcase the utmost technical skill and creativity – essential when it comes to revered plates of food – but also, demonstrate a personal belief in the transformative power of gastronomy as a device for positive change in society.

With news of the shortlist, Arlen and Nicolas are now one step closer to representing Ireland at S.Pellegrino’s anticipated Young Chef Grand Finale next year.

The Competition

From August to December 2019, Arlen, Nicolas and the rest of the candidates of each region will compete in 12 regional challenges. Each region will have a jury composed of leading independent chefs, who will judge the candidates’ signature dishes and select the regional winners of the four awards.

By the end of December 2019, the Young Chefs from around the globe announced as official finalists of the four awards will move on to the Grand Finale to be held in June 2020. Throughout, each finalist will be accompanied by Mentor Chefs, who will provide them with guidance on how to improve their signature dishes and support them in their preparation for the international finals.
