A new home cooking series is coming to RTÉ One

It's helmed by award-winning chef Mark Moriarty

No doubt in response to the massive surge in people cooking at home (for obvious reason), RTÉ has produced a new eight-part series, Cook-in With Mark Moriarty and Bord Bia.

The show aims to equip home chefs with a go-to array of easy recipes made with the food many of us have in our fridges, cupboards and freezers. Along with fresh food, Mark will be whipping up dishes using non-perishables, tinned pulses and packets and even leftovers.

There will be a focus on Irish produce as part of the Bord Bia Quality Comforts’ campaign and Mark will also be checking in with Irish food producers and viewers each week. (If you have any food-related queries you can get in touch with Mark via  [email protected]).

A chef at the two-Michelin star restaurant The Greenhouse in Dublin, Mark is a dab hand at being in front of the screen as he’s also the presenter of RTÉ’s Beyond The Menu series. Lately, he’s also been working with a not-for-profit organisation preparing meals for front line staff.

Speaking about the new show he said: “I am delighted to be presenting Cook-in... which I hope will give you useful and practical advice for creating simple dishes, while you stay safe at home during the ongoing pandemic. I’m aiming to keep things simple, using three or four steps for each dish - but hopefully, my experience as a chef and knowledge of ingredients can help elevate your cupboard essentials into a delicious dish.”

it all kicks off on Wednesday 6 May at 8:30pm on RTÉ One. Mark has given us the first recipe from the series so you can give it a try ahead of time.

Spaghetti with, bacon, garlic, chilli and parsley 

Serves 4 

Ingredients: 

200g dried pasta

100g rindless streaky bacon

4 cloves garlic, crushed

2 chillis, diced

Large handful parsley, chopped (if available) 

100g parmesan, grated

1 Lemon juice and zest

Olive oil 

Method: 

1.   Place the pasta in boiling salted water, cook until just tender (6ish mins) .
2.   In a pot, heat the olive oil. Cut the bacon into lardons, fry in oil until crispy. Add the garlic and chilli and cook over a medium heat for 2 minutes or until the garlic has started to turn golden, season heavily. 
3.   Remove the pasta from the water and add to the oil mix, add a ladle full of pasta water, followed by the parmesan, lemon juice, zest and parsley. 
4.   Season with some more olive oil, lemon and salt and serve in warm bowls.
