In what has been a challenging year for the country’s hospitality industry, it’s good to see some positive news.
Ireland’s Blue Book, a renowned collection of the best hotels, country houses and restaurants on the island has just announced two new additions for 2021. The inclusion of Galway’s Delphi Lodge and Dublin’s Dax Restaurant brings the total number of properties to 57.
Delphi Lodge is an 1830s country house hotel in Connemara, Galway. The 1000-acre estate is set in a valley and has been described as one of Ireland’s hidden treasures, and is a dream for fans of the outdoors. The lodge itself has 13 bedrooms, while there are six restored country cottages on the estate.
Dax restaurant has been open since 2004 and is located in the heart of Dublin city. Head chef Graham Neville, previously of Thornton’s and Restaurant41, is known for creating modern Irish cuisine using the best local produce. The restaurant also boasts an impressive wine list.
