Kerry man John Relihan, who has been described as one of Europe’s most creative dedicated pit masters is making a special appearance on popular chef Jamie Oliver’s Instagram in honour of St Patrick’s day.
Relihan, who ran his own restaurant, Holy Smoke in Cork, and now works as executive head chef for KSG Ireland in Dublin, has a long relationship with Oliver.
He completed a course at Oliver’s famous Fifteen restaurant and college back in 2004, appeared on the TV show Jamie’s Chef in 2007, and later worked as head chef in Barbecoa, Oliver’s BBQ smokehouse restaurant in London for six years. The restaurant became known for championing cooking ‘low and slow’ with many different fire methods.
To celebrate Ireland's national day this Wednesday Relihan will be cooking a bacon and cabbage dish that his mother used to make for him. However, as one might expect, there is a twist and he will be cooking over fire and using cast iron pots. It promises to be quite a spectacle.
