If you're looking for a thoughtful Christmas present for the food and drink lover in your life, Le Cordon Bleu London has just launched a new class as part of their 2020 Short Course and Wine offering.
For the first time, the internationally renowned culinary school will be running a Sustainable Wine Masterclass under the guidance of Master Sommelier, Matthieu Longuère.
The two-hour masterclass will focus on a variety of winemaking techniques and practices. It will teach students the difference in practices between organic, biodynamic wines and natural wines, as well as how to select wines made in a more eco-conscious way.
In total, eight wines coming from a variety of wine-producing countries will be tasted, including sparkling wine, two white wines, an orange wine, pink wine and three red wines.
The Master Sommelier will also address the influence of viticultural practices and winemaking techniques on the wine flavour profile. No previous experience is required to participate in this course.
Among the other short courses available for 2020, you can also take “Cheese and Wine Pairing” to discover the various interaction and what influence the taste of the wine has on the taste of the cheese, and vice versa. For two hours and £85, it includes a variety of cheeses, which will be paired with sparkling wine, two white wines, a red wine, dessert wine and a dry fortified wine.
If you are looking for a more thorough experience, Le Cordon Bleu also offers a programme on “Wine Essentials”, where you can learn a systematic approach to wine tasting, alongside sensory analysis, viticulture and winemaking techniques, wine legislation, food and wine pairing, storing and serving wine, and ageing processes. Priced £795, the five-day course includes excursions on top of the theoretical knowledge.
