Ex-chef turned author James Whetlor has just won a James Beard Foundation Medal for his new book, Goat: Cooking and Eating

The award, one of the most prestigious accolades in America comes from the James Beard Foundation which celebrates, nurtures and honours chefs and leaders in food culture.

Goat: Cooking and Eating (Quadrille Books) aims to encourage more people to use goat in everyday meals. It features 90 recipes, from slow-cooked curries to roasts and burgers, arranged by cooking technique. The book also includes a number of original dishes from renowned names such as Yotam Ottolenghi, Neil Rankin, Olia Hercules, Gill Meller and Jeremy Lee.

James is the founder of Cabrito Goat Meat in Devon, England which sells to catering butchers and restaurants, from a network of farms across the country. In the book, he also highlights a number of issues in the industry and Cabrito’s charitable work with Farm Africa, a charity in rural east Africa that helps to reduce poverty by helping farmers to access markets and add value to their produce.
