Vegan orange cake with vanilla coconut frosting

Makes one 9-inch layer cake

If you’ve never made a vegan cake before, then this is a good one to try. The orange flavour really complements the rich vanilla, while the whipped vanilla coconut frosting is an interesting and tasty topping.


For the cake

  • 384g plain flour
  • 201g organic caster sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 teaspoons bicarbonate of soda
  • 470ml orange juice
  • 60ml grapeseed oil
  • 2 1/2 teaspoons of Nielsen-Massey Orange Extract
  • 1 teaspoon Nielsen-Massey Gourmet Vanilla Extract, or Vanilla Paste

For the vanilla coconut frosting

  • 592g coconut cream, chilled in the fridge for at least one hour or overnight
  • 45-60ml organic agave or maple syrup
  • 1 teaspoon Nielsen-Massey Gourmet Vanilla Extract, or Vanilla Paste

To garnish

  • 1 orange, zest only
  • Fresh cranberries, optional
  • Icing sugar, optional


  1. Preheat oven to 180C/350F. Lightly grease two 9-inch cake tins with oil, then dust with flour. Place a mixing bowl into the fridge to cool for at least half an hour - this is for the frosting.
  2. Whisk together the flour, sugar, salt, baking powder, and bicarbonate of soda in a medium mixing bowl.
  3. In a large mixing bowl, combine the orange juice, oil, orange extract and vanilla extract
  4. Gradually whisk the dry ingredients into the wet cake mix then, once combined, divide evenly between the two cake tins. Bake for 22 minutes or until a skewer inserted into the middle of the cake comes out clean, then leave to cool.
  5. Next, make the frosting. Remove the cold bowl from the fridge and scoop in the cold coconut cream, leaving behind any liquid. Whip the coconut cream for 1-2 minutes until it thickens, then add in the agave or maple syrup, and vanilla extract. Whip on medium to high speed for 1-3 minutes or more, until stiff peaks form. Check the consistency every 30 seconds so it isn’t over-mixed.
  6. When the cake is cool, top one layer with half of the vanilla coconut whip. Place the other cake on top and frost with the remaining icing. Finish with the orange zest, then add cranberries and a dusting of icing sugar if using.
