This hot water pastry from Louise Lennox is great for samosas.

Yield: Makes 500g


  • 300g plain flour
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 140ml water
  • 100g lard


  1. Sieve the flour, salt and turmeric together into a bowl.
  2. Put the water and lard into a saucepan. Heat gently until the lard has melted, then bring to the boil.
  3. Make a well in the middle of the flour and pour the hot water in and mix together with a wooden spoon until a soft dough is formed. Allow to cool slightly.

TIP: This pastry can also be rolled out using a pastry machine. Divide the pastry into four pieces first.
