This hot water pastry from Louise Lennox is great for samosas.

Yield: Makes 500g
- 300g plain flour
- 1 teaspoon salt
- 1 teaspoon turmeric
- 140ml water
- 100g lard
- Sieve the flour, salt and turmeric together into a bowl.
- Put the water and lard into a saucepan. Heat gently until the lard has melted, then bring to the boil.
- Make a well in the middle of the flour and pour the hot water in and mix together with a wooden spoon until a soft dough is formed. Allow to cool slightly.
TIP: This pastry can also be rolled out using a pastry machine. Divide the pastry into four pieces first.
