The humble fig is often overlooked as a cocktail ingredient. With its rich aromatic flavours, it's the time to enjoy this fig fizzer.
- 5 lime wedges
- ½ fresh fig, cut into quarters
- 10-15 mint leaves
- 1 tablespoon granulated sugar
- 4ml Havana club rum
- Club soda, to top off
- Mash the lime, fig, mint and sugar until they mix to a juicy blend.
- Transfer mix to a shaker and fill with crushed ice.
- Add the rum then cover, shake well and pour into a highball glass.
- Top off with a splash of club soda.
