In this year's FOOD&WINE Awards, in association with Rémy Martin, there are nine specific categories that in our National Restaurant Awards section. Here, we take a look at three in more detail.

It's a question we get asked all the time... What's your favourite restaurant? Such a difficult question to answer as we are fortunate in Ireland to have so many amazing restaurants, from fine dining to casual, to the best restaurant in a hotel. 

For our awards, we make the answer to this question a little easier for you by breaking it down into categories. The following are three that we feel are very specific in nature and our explanations will help inspire you to nominate the best you've experienced on travels around the island. 

Hotel Restaurant of the Year

You only have to look at the list of our previous winners of this category to see the standard of restaurants in hotels across the country. Winners such as La Fougère at Knockranny House Hotel, Westport, Catalina Restaurant, Lough Erne Estate, Fermanagh, and La Marine, Kelly’s Hotel, Rosslare, County Wexford to name but a few. 

A hotel restaurant has to have the whole package, from offering a high standard of service to a wine list that is both comprehensive yet fitting for its clientele. The menu needs to blend with the hotel's backdrop as well as the local backdrop and landscape. Farm & Sea to Plate

Provenance is a word that gets thrown around a lot in the restaurant industry. Often misinterpreted and regularly used too lightly without substantial merit. 

This award is given to those who truly bring their passion onto their menus and onto the plate. A restaurant that sources quality ingredients, locally where possible, sustainably where possible, and at all times is mindful of seasonality and regionality. But I am sure you agree the last two should be a given! Nominate your favourite restaurant that brings the best taste of the sea and land to their customers here.

Best for Wine Lovers

A well-curated wine list is like a symphony of tastes. It appeals to everyone but is specific enough to please those that are particular. It also marries so well with the menu that it provokes your taste buds to identify more flavour in the food without overpowering or quenching. 

It doesn't have to be long... often the smallest, most succinct lists are those that are the most throughout and enjoyable. However, appreciation should be given to those that can also curate a broader cellar and one with hidden gems for the right occasion.
