Big Night: Shane Mitchell of Asador and Prado

At some point, our world will return to normal - even if it is a new normal. But where will we go for our first night out?

We asked some well-known names in the Irish food and drinks industry to tell us what they're planning when restrictions are lifted. Today, we spoke to Shane Mitchell who owns Asador and Prado restaurants in Dublin:

"There are so many great bars and restaurants in Dublin these days, so this question was not easy to answer. I've settled on a pre-lunch pint of Guinness in The Swan Bar on York Street, with my dad and my uncle John, followed by lunch in Uno Mas.

There'd be Jamon Iberico to start, followed by squid a la plancha, and then the salt-aged Delmonico steak. A bottle of Louro Godello by Rafael Palacios would go with the Jamon and squid, followed by a bottle of 2006 Vina Tondonia Reserva from Vinos Tito. 

No dessert - instead I'd take a taxi to Smyths of Haddington Road for a couple of pints with the best in the business, Stephen Weldon, accompanied by a packet of bacon fries. It's great to be able to dream of days like this!"
