The world is finally starting to return to normal - even if it is a new normal - so people are finally starting to head back out to restaurants, bars and more.
We asked some well-known names in the Irish food and drinks industry to tell us what they're planning when restrictions are lifted. Today, we spoke to Jenny Flynn, head chef at Faithlegg House Hotel in County Waterford:
"I am really looking forward to the day I can jump in the car, put on the sunglasses and head to New Ross in my home county of Wexford where I can enjoy the welcome from Lisa and Emmet Hall of Mannion’s Gastro Pub. The menu is seasonal and Nigel Teague the chef is a supporter of local organic suppliers. This sounds really simple, but I love Tom Cleary’s organic vegetables, I don’t know how he cooks them or what he puts on them, but they taste amazing in his Crowe’s bacon and O’ Neill’s black pudding dish, which is always a delight.

With the busy life I lead, it is nice to just get to relax in an atmosphere with lovely food and I always have a giggle with Emmet. We tend to make a day of it and get our weekly vegetables from the farm shop across the road and head back home with the smell of strawberries in the car via the longest bridge in Ireland. I really am a girl of simple pleasures!"
