Do you love brunch but get bored of the same old, unimaginative options for vegetarians? Us too. Check out these delicious recipes from Two Boys Brew and make a gourmet veggie breakfast from the comfort of your own kitchen. 

Two Boys Brew has only been in existence for over a year but it has garnered a loyal following. Set up by partners and Drogheda natives, Taurean Coughlan and Kevin Roche, the pair were inspired by the café culture they enjoyed during their four-year stint in Melbourne, and wanted to recreate that same relaxed ambience and style of food once they returned home. With head chef, Jane McGuinness, in the kitchen, Two Boys Brew offers a seasonal and contemporary menu in a modern, industrial-style settng in Dublin’s Phibsborough. Brunch is served all day every day, with some specials added on for midweek lunch. Food is seasonal, with a regularly changing menu with some Middle Eastern influences. 

1. Coconut granola, fresh yogurt, roasted pineapple, pomegranate and basil. 

2. Almond and apple bircher bowl, honey labneh, fresh passion fruit and apple

3. Apple crumble and ricotta hotcake with fresh blackberries

4. Brew baked eggs, pepperonata sauce, goat's cheese and house-made dukkah with sourdough

5. Courgette, pea, mint and feta fritters with avocado salsa, lemon yogurt, crispy shallots and rocket salad. 

6. Sweet potato rosti with red pepper salsa, harissa hummus, grilled halloumi, poached eggs, garlic cavolo nero and nigella seeds.
