One of Dublin's most iconic hotels, The Shelbourne has stood at St Stephen's Green for 195 years – celebrating this momentous milestone this year in fact – and after undergoing a recent refurbishment of some of its public spaces, it is has been restored to an exquisite standard of luxury.
The €40 million renovation programme by Guy Oliver of design firm Oliver Laws has updated the elegant interior of The Shelbourne to honour its illustrious history. Speaking about the refurbishment, General Manager of The Shelbourne, JP Kavanagh, told us how exciting this phase is. “This Grand Dame keeps improving with age. The 195th birthday of The Shelbourne is turning out to be a really exciting year for us, joining the Autograph Collection and completing the final phase of our extensive refurbishment. The Shelbourne is looking better than ever.”
Pop the bubbles!
Celebrating 195 years is a good enough excuse to pop some bubbles, so we are delighted at FOOD&WINE to be able to join in the celebrations by hosting this fantastic Laurent Perrier event on Wednesday, 21st August.
Nisea Doddy is the Head Sommelier at The Shelbourne and over the past couple of years, she has collaborated with signature wine houses to offer unique wine dinners like this – her favourite being with Champagne Laurent Perrier.
A night to remember
Set in the historic surroundings of The Saddle Room, the evening will begin with a Laurent-Perrier Champagne reception on The Terrace at 6.30pm. The Terrace is one of the beautiful newly restored spaces as part of the landmark renovations. A really chic spot to enjoy a glass of bubbles in the heart of the city.
Guests will then move to The Saddle Room Restaurant where Executive Chef Garry Hughes has curated a wonderful five-course tasting menu (see below).
Each course will be beautifully paired with a selected Laurent-Perrier Champagne, introduced by Tomás Clancy, wine and spirits writer and journalist from The Sunday Business Post.
