We are delighted to announce that the legendary chef Pierre Koffmann will be our special guest at the 2019 F&W Awards in association with Rémy Martin.
This year is the first year for our parent company Irish Studio to host the event and we are eager to highlight the vision for the Food&Wine brand with the industry in a celebration of the finest and most talented chefs, restaurateurs, café owners and teams that the island of Ireland is home to.
To help us throw an extra spotlight on the day, Pierre Koffman and his wife Claire will join us as our special guests. Pierre has achieved superlative success in his long career, holding three Michelin stars at his groundbreaking La Tante Claire for 15 years and setting the standards for French cuisine in Britain.
Koffmann has worked with some of the most esteemed chefs in the industry, his proteges including but not limited to Tom Aikens, Gordon Ramsay, Marco Pierre White, Marcus Wareing, Bruno Loubet, Tom Kitchin and Jason Atherton. In 2016, Pierre received the Lifetime Achievement awards at the Observer Food Monthly Awards.
One recipe that remains synonymous with Pierre Koffmann’s cooking is his stuffed pig trotter. This humblest of cuts is transformed through the incredibly complicated task of deboning, then stuffed with luxurious ingredients (sweetbreads, morel mushrooms and onions, bound by a light chicken mousse). Humble and honest, but concealing luxury within, it combines the simple with the decadent, perfectly embodying Koffmann’s attitude to food.
"I have been to Dublin many times, mainly to see Ireland play France in rugby – the Irish really are the best supporters, win or lose they still enjoy it. I think they are the best people to watch a match with – but I haven't been to Dublin for many years now and I am really looking forward to this trip.
I have been to Ireland more recently for Food on the Edge. It is something I really enjoy because people are so friendly in Ireland. In London, I have experienced great Irish food in Richard Corrigan's restaurants and we know Anna Haugh, she is great, and Robin Gill, we have been to his restaurant The Dairy in Clapham and his new one Darby's beside the American Embassy. They are great Irish chefs in London. In Dublin, I don't know the chefs but I am excited to meet them at the Food&Wine Awards and to try some restaurants while we are visiting the city."

At this year's event on Sunday, 25th August in The Shelbourne, Pierre Koffmann will be helping us to celebrate and honour the heroes of the hospitality industry in Ireland. We have exciting news of a new award for 2020 that Pierre will be discussing with our editor Dee Laffan on stage and also chatting through the highlights of his career.
Most importantly, Pierre will be presenting our big awards on the day to the overall winners of Best Chef and Best Restaurant in Ireland. These awards are sponsored by Rémy Martin and both winners will receive bottles of the exquisite Rémy Martin XO.
