What we're cooking this week

Five delicious dishes to try this week.

SHARE

It's the start of a new week which means it's time to figure out what to cook.

Our food cravings have inspired this list, based on recipes we've been posting on the site lately. The dishes below are ones we know we'll cook again and again, so try them out with us and let us know what you think.

Chicken and tomato fricassee with grilled vegetables

Chicken Fricassee – a comforting and flavorful one-pan chicken and vegetable stew in a velvety sauce that is perfect as a family weeknight meal and a casual intimate dinner for entertaining. Bonus! It’s one of those one-pan meals that you can easily whip in less than an hour making it the perfect back-to-school dinner recipe.

This salmon recipe is perfect for a quick midweek dinner. Cooking the salmon in paper alongside vegetables means everything gets cooked together at the same time with absolutely minimal effort.

Shakshouka with baked eggs and coriander yoghurt

Eggs are a super versatile food that can be eaten at any time of the day and even if you're struggling to keep your kitchen as well-stocked as you like, we bet you have a few eggs on hand. This shakshouka recipe is easy to follow and can be scaled up or down, depending on how many people you need to feed. We recommend doubling the yoghurt recipe to use as a dip or salad dressing.

Meere's Cowboy Beef Chilli

Chilli is one of those dishes that tastes even better the next day. If you want to make it ahead of time, just be sure to let it come to room temperature before putting it an airtight container and storing it in the fridge. Leftover will last 3 to 5 days.

Falafel is perfect for lunch, so we like to double this recipe to eat throughout the week. This dish is served up in a wrap but the falafel works really well or in a salad or even just by themselves as a snack.
