The Marquise
Serves one
Ingredients
- 40ml Hendricks gin
- 15ml cucumber syrup
- 15ml lemon juice
- Fresh mint
- Champagne
- Cucumber, to garnish
Method:
- Add the gin, cucumber syrup, lemon juice and eight fresh mint leaves to a cocktail shaker.
- Add ice cubes and shake thoroughly for 15-20 seconds.
- Double strain into a Champagne flute and top with your favourite Champagne.
- Garnish with a strip of cucumber, rolled.
Brandy Alexander
Serves one
Ingredients
- 50ml Hennessy VS Brandy
- 25ml crème de cacao
- 25ml cream
- Cocoa powder, to garnish
Method
- Add all ingredients, except garnish, to a cocktail shaker with ice.
- Shake well and strain into a chilled martini glass, then garnish with a little cocoa - a snowflake pattern is a nice touch.
Amaretto Sour
Serves one
Ingredients
- 50ml Disaronno
- 25ml lemon juice
- 10ml simple syrup
- 25ml egg white, about one small egg white
- Lemon peel, to garnish
Method
- Add all ingredients, except garnish, to a cocktail shaker with ice.
- Shake well and strain into a chilled coupe glass. Garnish with a little lemon peel.

Gold, Frankincense & Myrrh

Serves one
Ingredients
- 40ml Roe & Co. Blended Irish Whiskey
- 10ml mead
- 30ml coconut water
- 5ml honey
- 1 dash salt
- Honeycomb, to garnish
Method
- Place all ingredients, excluding garnish, into a mixing glass and stir together.
- Pour into a coupe glass and garnish with honeycomb.

Christmas Cocktail
Serves one
Ingredients
- 35ml vodka
- 30ml Baileys
- 25ml espresso
- 50ml salted caramel sauce
- Edible glitter, to garnish
- Cocoa powder, to garnish
Method:
- Add all ingredients, except garnish, to a cocktail shaker with ice.
- Strain into a martini glass.
- For the garnish, sieve the cocoa powder and edible glitter through a star stencil, then enjoy.
Christmas Alexander
Serves one
Ingredients
- 40ml dark rum
- 20ml créme de cacao
- 10ml prune syrup
- 40ml cream
- Star anise, to garnish
- Freshly grated nutmeg, to garnish
Method
- Combine all ingredients, excluding garnish, in a cocktail shaker with ice.
- Shake vigorously and strain into a chilled martini glass.
- Garnish with nutmeg and serve in a Martini glass.
TIP: Some of these recipes call for simple syrup or various flavoured syrups. You can buy sugar syrup in stores or easily make your own by adding equal parts sugar and water to a pot. Simmer while stirring until the sugar is dissolved then allow to cool before using. For flavoured syrups, simply add the necessary ingredient, such as cucumber, berries or cinnamon, while cooking, then leave in the mix while the syrup is cooling. Strain before using.
