We may not be able to enjoy a cocktail in a bar at the minute, but we can recreate this one from the Liquor Lounge in Galway city.
- Pour all ingredients into a glass except the Prosecco (or a cocktails shaker instead of a glass if you have it).
- Muddle with the fresh raspberries.
- Pour into a tall glass and top with crushed ice. Shake the mixture with ice first if you have a cocktail shaker.
- Finish off by the topping the drink with a dash of Prosecco, garnishing it with some fresh fruit, edible flowers or sprig of rosemary, then enjoy.
