It doesn't have to be sunny for us to enjoy a cocktail or two but it does help to add a bit of a holiday feeling to proceedings.
Whatever the weather, we have a trio of gin-based recipes that you can experiment with the next time you fancy a cocktail.
Simple and delicious, if you like a citrus kick check out The Kerry Lily. The mint-infused gin smash is a perfect drink for a hot day, while the Ferriter's Cove, with its raspberry purée and elderflower liqueur, tastes as good as it looks. Give them a try.
The Kerry Lily
35ml Dingle Gin
35ml Cointreau
35ml lemon juice
Method
Shake the ingredients with ice and strain into a chilled coupe glass . Garnish with floating edible flower petals.

Gin Smash
- 50ml Dingle Gin
- 15ml sugar syrup
- Handful of mint leaves
Method
Add the ingredients to a lowball glass and muddle them together. Add crushed ice while stirring and garnish with a wedge of lime.
Ferriter’s Cove
Ingredients
- 35ml Dingle Gin
- 20ml Raspberry purée
- 10ml Elderflower liqueur
- 20ml lemon juice
- 10ml sugar syrup
- White lemonade
Method
Shake ingredients together in a cocktail shaker. Strain into a highball glass full of ice and top with white lemonade . Garnish with a lemon slice and raspberries.
