Gin sour

Ingredients:
- 50ml Micil Irish Gin
- 25ml fresh orange juice
- 30ml simple sugar syrup
- 1⁄2 egg white
- Ice
- Slice of orange peel
Method:
- Add the gin, orange juice, sugar syrup and egg white to a cocktail shaker.
- Shake well and strain into an ice-filled glass.
- Garnish with a slice of orange peel before serving and enjoy.

Blackwater Clover Club

Ingredients:
- 50ml Blackwater No5 Gin
- 30ml lemon juice
- Two spoons of good raspberry jam or raspberry liqueur
- 1 egg white
Method:
1. Combine all ingredients in an ice-filled shaker
2. Shake vigorously until well frosted.
3. Double strain into a chilled-cocktail glass and garnish with raspberries
4. Serve immediately

Atlantic Twist

Ingredients:
- 50ml Dingle Gin
- 70ml grapefruit juice
- 35ml sugar syrup
- 25ml lime juice
- 2 dashes of Angostura bitters
- Slice of lime or grapefruit, for garnish
Method:
- Chill a martini glass.
- Add all ingredients, except the garnish, to a cocktail shaker with ice and shake thoroughly. Double strain into a chilled martini glass.
- Garnish with lime or grapefruit.

Connemara Collins
Ingredients:
- Handful of fresh blueberries
- 50ml Micil Irish Gin
- 30ml lemon juice
- Soda water
- Ice
Method:
- Add six blueberries to a cocktail shaker and muddle.
- Add the gin, lemon juice and simple sugar syrup to the shaker.
- Shake and strain into slim jim tumbler glass filled with ice.
- Top up the glass with your choice of soda water and garnish with the remaining blueberries to serve.

Dingle Bramble

Ingredients:
- 50ml Dingle Gin
- 20ml lemon juice
- 15ml Crème de Mure
- 10ml sugar syrup
- Lemon slice or blackberries, to garnish
Method
- Fill a whiskey glass with crushed ice.
- Pour all the ingredients, except for the garnish, into a cocktail shaker with ice.
- Strain into the ice-filled whiskey glass and garnish with lemon or blackberry.

The Bee's Knees

Ingredients:
- 10ml runny honey
- 5ml water
- 50ml Drumshanbo Gunpowder Irish Gin
- 15ml fresh lemon juice
Method:

Stir the honey into the water until it
has dissolved to make a syrup. - Pour the honey mixture into a cocktail shaker with the gin, lemon juice and a couple of ice cubes. Shake well.
- Strain into a cocktail glass.

Gin Martini

Ingredients:
- 70 ml Micil Irish Gin
- 5ml dry vermouth
- Ice
- Lemon rind to garnish
Method:
- Chill a martini glass.
- Add the gin and dry vermouth to a cocktail shaker with ice and stir until the liquid doubles in height.
- Strain into the chilled glass and garnish with the lemon rind.
