
Cucumbers are naturally refreshing but they do need something extra to bring out real flavour, and the idea of a mojito juice is a fun and healthy way to keep the party going in January
Serves 2
Ingredients
- ½ cucumber
- 1 handful kale
- 1 handful spinach
- 1 small bunch mint
- 2 green apples
- 1 dash lime juice
Method
1 Add all the ingredients to a juicer and blend until smooth. Serve over ice with a wedge of lime.
TIP: Adding lime and mint to a juice will always give it a lift, while the apple will bring sweetness.
