Daniel Humm, the culinary innovator behind Eleven Madison Park in New York, has announced that he and restaurateur Will Guidara from Make It Nice Hospitality will open Davies & Brook at Claridge’s in London this summer.
Davies & Brook will add to Humm and Guidara’s portfolio of stateside eateries: the pair also own NoMad restaurants and bars across the country and Made Nice in New York City, as well as the three Michelin-starred Eleven Madison Park flagship restaurant. The new restaurant, which will be helmed by executive chef Dmitri Magi, is aiming for fine dining, minus pretence. There will also be a massive focus on warm hospitality and delicious food.
Announcing the partnership on Instagram, Humm said that this opportunity was a dream come true:
“When I was 15 years old I even had a job at Claridge’s – it was a place I looked up to with awe and never in a million years thought I’d be opening a restaurant within those walls. Being able to come back is really emotional, it feels like coming home. I can’t wait to open our doors and serve the city of London later this year.”

Guidara echoed Humm’s statement on Instagram, recalling how magical his first visit to Claridge’s was:
“I remember the first time I walked into Claridge’s like it was yesterday. [Daniel Humm] and I were in London for the [The World’s 50 Best] and we decided to splurge on a nice place to stay to celebrate the occasion. That hotel had always held a special place in Daniel’s heart and he really wanted me to see it.”
“I fell in love the moment they opened the front doors for us. But here’s the thing- it wasn’t because of how over the top gorgeous it was, or how perfectly attentive the service was, or how unbelievably cool the old school elevator... It was because there, at that storied hotel, I saw a brand of hospitality that felt so familiar to me, so aligned with our own. They took what they did so seriously, but they didn’t take themselves too seriously. They were running one of the greatest hotels on the planet, and you could tell they were having a blast doing it. Their smiles were infectious, their passion contagious... it immediately felt like a second home.”

Humm, who is originally from Switzerland, began working at Eleven Madison Park with Guidara 2007. The pair then purchased the restaurant from Danny Meyer’s Union Square Hospitality Group in 2011 and it has since been lauded as one of the best in the country, culminating in Eleven Madison Park being named number one at The World’s 50 Best Restaurants in 2017.
