Spiced fruit soda bread

Add to your bread baking repertoire with this festive soda bread

Ingredients

  • The Little Mill Irish Soda Bread Mix
  • 1 tsp mixed spice
  • ¼ tsp ground nutmeg
  • 100g dried mixed fruit
  • 1 tbsp honey
  • 430ml milk

 

Directions

  1. Turn your oven on to 165°C/325°F/Gas mark 3 and lightly grease your 2lb/900g loaf tin with butter.
  2. Empty the contents of the packet into your mixing bowl. Add the mixed spice, ground nutmeg, dried mixed fruit, honey and then milk. Using a wooden spoon, gently mix together until you form a smooth wet dough.
  3. Spoon the dough into the greased baking tin. Lightly press the dough into the corners using your fingers. To help the bread rise, use a wet knife to cut a line lengthways down the centre of the dough approx 1”/3cm deep.
  4. Place the tin into your preheated oven straight away and bake for 35-40 minutes. When the bread is fully baked an inserted skewer should come out clean. Turn out onto a wire rack and allow to cool before serving.
