We are delighted to host an exclusive FOOD&WINE Readers Evening in The Saddle Room at The Shelbourne on Wednesday, September 19 at 6pm, celebrating the Champagnes of Laurent-Perrier.

Guests will enjoy a five-course menu created by Executive Head Chef Garry Hughes and dinner will be accompanied by selected Champagnes from luxury Champagne house Laurent-Perrier, each introduced by brand ambassador Nicole Snozzi who has worked exclusively with the house for the past 25 years.

Set in the historical surroundings of The Saddle Room, the evening will begin with a Champagne reception on The Terrace at 6.15 p.m, where The Shelbourne sommelier, Nisea Doddy, will be opening Champagne using the sabrage method. Recently conferred as a member of the Confrérie du Sabre d'Or, with The Shelbourne now being the only Irish Caveau of the Confrérie, Nisea will be using her sabre to open Champagne on the night - an appropriately old-school beginning to an evening focused on the Champagnes of a house founded in 1812.

The menu will be as much of a delight as the Champagnes, as Chef Garry Hughes has designed each course to pair beautifully with them.

Guests to be seated at 7.00pm, and dinner highlights to look forward to on the menu include an heirloom tomato salad with bespoke ricotta and yuzu dressing partnered with Laurent-Perrier Ultra Brut, seared Bantry Bay scallops with wilted chicory scented with hazelnut oil and truffle alongside Laurent-Perrier Brut.

To follow is seared line-caught turbot with Imperial Caviar Oyster Cream with Laurent-Perrier Cuvée Rosé, a roast saddle of rabbit with pancetta, sweet corn, pickled red onion and Champagne foam matched with Laurent-Perrier Vintage.

A vanilla panna cotta and poached rhubarb accompanied by Grand Siècle by Laurent-Perrier will finish off the evening.

Tickets for this indulgent FOOD&WINE dining experience with the finest Champagnes created by Laurent-Perrier and The Saddle Room’s superbly paired menu are priced at €99 per person.
