One of the most highly-anticipated restaurant openings of the year has been delayed due to ongoing building delays. Aimsir, located in the Cliff at Lyons, Kildare, with Head Chef Jordan Bailey is now set to open in March 2019.

However, good news also comes with this delay in that you won’t have to wait until March to be able to experience what Aimsir will be like as they have announced a series of pop-ups in November to show-off a taster for what’s to come.

Frustrating as it must be for head chef Jordan Bailey and his wife and front-of-house manager Majken to delay their debut in Ireland for another six months, the pop-up series – Elements of Aimsir – will allow them to showcase their talents and hospitality and get everyone more excited about the 2019 opening.

In a press released today, Jordan commented, “Majken and myself always knew there was a possibility of a delay. These things happen when you are creating a new restaurant that is being integrated into an historic building; the buildings dictate that you need to work around them, rather than through them, so this has delayed us a little. We then had to make the decision whether to open during Christmas or to push it back a little. We decided that it made more sense to open Aimsir with a clean slate and a brand new restaurant for a brand new year.”

Elements of Aimsir takes place over six nights in Love One Cottage, one of the restored cut-stone cottages on the grounds of Cliff at Lyons. Jordan, Majken and a small team will serve four courses with some in-between treats, paired with wines or juices – introducing themselves, their take on the produce of Ireland, their aspirations for Aimsir and how this all fits into Cliff at Lyons.

“We are really looking forward to having the opportunity to share some of our ideas and ethos with a small number of guests this November,” front of house manager Majken Bech-Bailey commented in the press release today.

Dinner will be €100 per head including drinks, with 10 places available per evening in a single service, shared dining format, beginning at 7pm each evening. Overnight package is available from €379, which includes an overnight stay in an Estate or Lilypond room, dinner for two (including beverages with the meal and full Irish breakfast the following morning), all based on two people sharing.

The six dates during November are Thursday 8th, Tuesday 13th, Wednesday 14th and Thursday 15th, Tuesday 20th and Wednesday 21st.
