Poke has suddenly taken off in Ireland and become a real food trend. 

Serves 4


  • 500g yellow fin tuna, sashimi quality
  • 200ml soya sauce
  • 200ml sesame oil
  • 100g sambal oelek
  • 250g scallions, chopped
  • 25g sesame seeds, toasted
  • 1 green and red fresh chilli, to garnish
  • 1 small bunch coriander, to decorate
  • Sourdough bread, to serve


1 Dice the tuna and marinate with the soya sauce sesame oil for a few minutes.

2 Add the sambal oelek chilli sauce and the chopped scallion.

3 Sprinkle toasted sesame seeds on the top and decorate with fresh chilli and coriander.

4 Toast a few slices of sourdough bread and season them with olive oil and sea salt and serve with the poke.

Tip: You can find the sambal oelek chilli sauce in Asian food stores or large supermarkets.
