Vin Santo syllabub
One of those really simple desserts that delivers punch and a degree of wow. And something to have sitting in the fridge ready to go
- 150ml Vin Santo
- 2 tablespoons grappa
- 1 lemon, zest and juice
- 50g caster sugar
- 300ml whipping cream
- Combine the Vin Santo and grappa with the zest and juice of the lemon in a large bowl and stir.
- Whisk in the caster sugar until dissolved and then the cream, whisking to the soft peak stage.
- Spoon into chilled glasses and serve. Best made a few hours in advance so the flavours mingle
No Vin Santo? A sweet oloroso sherry also works well.
