Vin Santo syllabub

One of those really simple desserts that delivers punch and a degree of wow. And something to have sitting in the fridge ready to go




  • 150ml Vin Santo
  • 2 tablespoons grappa
  • 1 lemon, zest and juice
  • 50g caster sugar
  • 300ml whipping cream



  1. Combine the Vin Santo and grappa with the zest and juice of the lemon in a large bowl and stir.
  2. Whisk in the caster sugar until dissolved and then the cream, whisking to the soft peak stage.
  3. Spoon into chilled glasses and serve. Best made a few hours in advance so the flavours mingle



No Vin Santo? A sweet oloroso sherry also works well.
